What's for dinner, tonight?

2003-12-23 05:35:37 AM
I think we'll be going out tonight, since my mother has volunteered to keep
Zach. I don't know where we'll go, but it's SO nice going out without
him---he's become difficult in restaurants lately.

Re:What's for dinner, tonight?

Rachel is away in North Carolina to visit her Dad, Lee is at work, so it is
just me and Ian. Probably tomato soup with grilled ham and cheese
sandwiches. Not very exciting huh?

Re:What's for dinner, tonight?

Your dinner sounds more yummy than mine! What is Chicken Korma? What is
naan?
We are having beef stroganoff, white rice, a spinach salad and some crusty
rolls that I found at the supermarket today.
Tomorrow however, is our Christmas dinner. We are having cornish hens
stuffed with orzo, pecans and raisins, asparagus "bundles" wrapped in
proscuitto and sprinkled with goat cheese, a spinach salad (leftover from
today) and for dessert - creme brulee. Ummmm......I think I'm hungry!

Cindi, that sounds yummy. There is nothing better than grilled cheese and
tomato soup. Henry loves to dunk his sandwich in his soup. So do I!

It is just one of those comfort food meals I think. *laughs* and when it is
just me and Ian we go for easy and our favorites. tomorrow night, mac and
cheese with chunks of leftover ham in it. God I am a walking advertisement
for bad nutrition.

It's not gourmet - it is all so easy! The hardest part is peeling and
mincing the ginger for the stuffing. Other than that, it is so easy, which
is why I love it!

Re:What's for dinner, tonight?

Well, this is pretty exciting...but chicken noodle soup. Can't keep
anything down...but I have to continue eating. Everyone else will probably
be having something frozen that DH cooks.
My goal is to be able to EAT Christmas dinner...because I missed
Thanksgiving dinner due to the stomach flu.

(yummy) too.

Like Brigitte, we also had Indian food. I made chicken masala biryani
with spinach, pistachio saffron rice, dal, and chapatis. (When I make
Masala, I use soy yogurt, which is not as rich as milk based yogurt,
but it tastes good and I like it hot and spicy).
We cook a lot of Indian food, mostly because much of the family loves
it, and also because it's fast, easy, and very nutritious. Mucn of it
can be vegetarian, but for a crowd like we're having right now,
boneless chicken bulks up the meal.

Re:What's for dinner, tonight?

Hamburgers with lots on them: mayo, ketchup, lettuce, tomato, cheese,
avacado and red onion. Yummmmm, love tons of veggies on my burgers
and sandwiches. Then we are having mixed veggies with about 6
different veggies. We have cooked veggies every night no matter what
else we are having, and I keep throwing veggies in all week with the
already cooked ones and cooking it all together, so the old ones cook
down into seasonings - super yummy.

Brigitte,
Do you make your Naan from scratch? If so, what kind of
technique/recipe do you use?
I've made it before but it is never puffy enough. I may not cook it
quickly enough, or not used enough yeast. My recipe calls to cook it
in a skillet/griddle and then transfer to a 400F oven to finish
cooking. I may have better luck if I broil it to finish, instead.

Re:What's for dinner, tonight?

This post is so funny! I always think about posting the same question.
I had bowtie pasta in an asiago cream sauce with grilled chicken and
pancetta, along with a caesar salad. Matt had a vegetable ravioli and
the kids had grilled cheese. We went out for my birthday, but fed the
kids first.

I've never made naan from scratch but I have pita bread. When I do
pita, the oven has to be very hot, 500ºF I think.
